Here is what you need for this easy frittata:

  • 6 eggs
  • 2 Cups 100% Egg Whites
  • 1 Cup Cottage cheese 2 Cups Turkey Sausage sausage

Use Emerson Blender to mix liquid ingredients for best results.

Instructions

Start by cooking the Turkey sausage in skillet until browned and fully cooked. If needed, drain any excess grease. Add the vegetables and cook until slightly softened and fragrant.

In large bowl, use the emersion blender to mix the eggs with your cottage cheese and seasonings until well combined. Stir in cheese if you are using it.

Transfer the sausage and vegetable mixture into prepared baking dish or oven-safe pan. Pour the egg mixture evenly over the top. Bake until the eggs are set and the top is lightly golden. 425 degree preheated oven for 30 min. Remove from Oven and top with your favorite cheese. 

Let the frittata rest for few minutes before slicing. Serve warm for breakfast or brunch, or cool and store slices for easy meal prep during the week.

Easy Breakfast Frittata

Ingredients:

  • 6 eggs
  • 2 cups egg whites
  • 1 cup cottage cheese
  • 2 cups turkey sausage
  • 2 cups potatoes O’Brien
  • 1 tsp seasoning
  • 1 cup spinach (optional)
  • Salt & pepper

Instructions:

  1. Preheat oven to 375°F
  2. Mix eggs, egg whites, and cottage cheese
  3. Add remaining ingredients
  4. Pour into greased baking dish
  5. Bake 35–40 minutes
  6. Let cool, slice, and serve

Notes:

  • Store in fridge up to 4 days
  • Freeze for later
